Five broad carb types are monitored in FlavorTrak K-12 Menus: Potatoes, Beans, Pasta, Rice and Noodles. Some carbs are listed on a greater proportion of menus, some offer more item type selection and some greater menu frequency. A set of measures is available in FlavorTrak to evaluate menu performance of carbs. Potatoes is a leading carb and is listed on 96% of school lunch menus. (see column 5). Close behind is Beans (94% category incidence) and Rice (91%). Getting listed on the menu is important, however, frequency of listing also has an impact. (see column 7). Potatoes is listed an average of 2.3 times / month, ahead of Beans (2.1 listings), but not as many times as Rice (2.4 listings).

Potatoes: more than 40 various potato item types are listed on school lunch menus, led by 1) mashed, 2) wedges / bites / rounds, 3) sweet potato fries / wedges / crinkles, 4) tater tots / sticks / nuggets / rounds and 5) mashed w/ gravy.
Beans: count exceeds 40 various bean item types, starting with 1) burrito w/ beef and beans, 2) vegetarian baked beans, 3) bean salad, 4) charra / charro beans, and 5) ranch / ranch style beans.
Pasta: upwards of 30 various pasta item types, with macaroni and cheese, cheese ravioli, lasagna, spaghetti with meatballs and rotini most popular.
Rice: there are more than 30 various rice item types. Leaders are 1) brown rice, 2) rice, 3) Spanish rice, 4) beans and rice and 5) Asian rice.
Noodles: less than 10 noodle item types on lunch menus. 1) chicken noodle soup. 2) Asian noodles, 3) chow mein 4) noodles and 5) noodles with chicken.
Item Type Performance Index: This statistic relates Menu Item Share (column 3) with Menu Frequency Share (column 4). By this measure, potatoes and rice exhibit above average menu performance with indices of 111 and 114.
